Breakfast is probably my favorite meal of the day. I am hungry as SOON as I wake up in the morning and usually want something quick and easy yet filling. So whether you’re fueling up for a workout or for a long day of work, oatmeal is always a great option.

You can do pretty much anything with oats. They create a great base for so many recipes and flavor combinations. In my opinion, one of the best flavor combos in general is peanut butter and banana. So why not make peanut butter banana oatmeal??

This isn’t just a “cut some bananas and put them on top of oats” kind of oatmeal. I mash the bananas and cook them with the oatmeal so it creates the full-on banana flavor. Trust me, you’ll never make peanut butter banana oatmeal any other way.

So tomorrow morning when you’re wondering what to have for breakfast, give this recipe a try and you won’t be disappointed :)


PEANUT BUTTER BANANA OATMEAL

INGREDIENTS:
    1/3 cup quick cooking microwaveable oats
    1 banana
    Peanut butter (to taste)
    2/3 cup milk (I used unsweetened vanilla almond milk)
1 teaspoon of cinnamon
    Additional toppings–anything you want!    



INSTRUCTIONS:
Cut the banana in half, mash one of the halves in a bowl
Put oats in a microwave-safe bowl and add the milk
Cook for 1 minute
 Add the mashed banana and continue cooking for about 30 seconds or until desired consistency. If oatmeal becomes too thick, add more milk.
Once cooked, add desired amount of peanut butter to a smaller microwave-safe bowl
Microwave for 30 seconds and add to oatmeal
Top with any toppings you want! I added sliced banana, chia seeds, shaved coconut and a drizzle more of peanut butter :) Enjoy!!

--If you want some extra sweetness, add some honey or chocolate chips!
