Whenever I cook an Italian dish, I always think of Giada De Laurentiis from the food network and try to say everything in her awesome Italian accent lol. She’s my favorite chef and Italian food is just gooood. Especially pizza.
Pizza is something I never get sick of…I. Love. Pizza. It’s just so satisfying! Usually, pizza is looked down upon as a generally unhealthy food, but I disagree. There are many versions of pizza and it’s really easy to make your own healthy pizza that’s still delicious!
You can put anything on pizza, but one of my most FAVORITE toppings is pesto. It has such a great depth of flavor and will perfectly compliment almost any other topping you decide to put on with it.
Sausage is another thing I love. For this pizza (and many other recipes I make that involve sausage) I chose to use a chicken sausage. It’s leaner than other sausages and you can usually find some really great flavors that are already cooked when you buy them! They just need to be heated up.
The amount of veggies you can put on pizza is endless. This recipe calls for cherry tomatoes and arugula. The arugula goes on last after the pizzas have come out of the oven making the pizzas taste really fresh and is perfect for summer.

PESTO PITA PIZZAS
Whole Wheat Pita Bread (preferable pocket-less pita bread)
Mozzarella slices (from a ball or log)
Fully cooked Chicken Sausage (I used Italian flavor), sliced thin
Cherry tomatoes (sliced into tiny rounds)
Preheat the oven to 375 degrees
Lay out the pitas and the rest of your ingredients
Spread the pesto sauce on the pitas
Slice your mozzarella and place 2-3 slices on each pizza (depending on how big the pita is)
Crumble some goat cheese all over
Add your sliced cherry tomatoes
Bake pizzas on a baking sheet for about 10 minutes and then broil for 2
Top with arugula after it comes out of the oven and enjoy :)
