THINK Positively, EAT PositiveLeigh: MUSHROOM QUINOA

Mmmm mushrooms. One of the best things about this dish is definitely the smell in the kitchen while you make it. The garlic, mushrooms, onions and rosemary…omg it makes my mouth water.

Mushrooms are an awesome ingredient to cook with. They add a lot of flavor to your dish and while you cook them, they kind of make a sauce on their own from the juices that run out of them. On the other hand, quinoa on its own is kind of bland. So adding everything together from this recipe makes a whole hearty, healthy meal. It is super easy to put together and has all the good carbs (low-carbs), protein and veggies you need.

This Mushroom Quinoa can be made as a complimentary side dish, or as a whole meal by itself – I hope you enjoy it because it’s positiveLeigh delicious! :)


MUSHROOM QUINOA

INGREDIENTS:
    Quinoa
    Mushrooms
    1 Onion, diced
    Chicken Broth (use as much as is stated on the package of Quinoa + ¼ cup for the
vegetables
    Rosemary to taste
    1 Clove of garlic (minced)
    Five cheese blend
    Salt & Pepper to taste



INSTRUCTIONS:
Cook quinoa according to instructions on package subbing water for chicken broth
Heat olive oil in a pan over medium heat
Add onion, garlic and mushrooms
Add rosemary, salt and pepper to taste
Add a little bit of chicken broth (about a ¼ cup)
Sauté until cooked and chicken broth is just about evaporated
Add cooked quinoa to the pan and stir together with the mushroom mixture
Sautee together for a couple minutes and transfer to a bowl
Top with a five-cheese blend (I just used Kraft Italian five-cheese blend) and eat up :)
